My family lived in DIMMIT COUNTY in TEXAS for generations. This recipe is from The Dimmit county Centennial 1880-1980 cookbook. This is just one of the recipes my Vivian family roots enjoy to this day
1 LB. ground beef 1 tbl. shortening 1 cup chopped onion 1 cup chopped fresh tomatoes 1/2 c. chopped green peppers 1 clove garlic 1/4 cup chopped stuffed olives 1 tea. flour 1 1/2 tea. salt 1/4 tea. pepper 2 pkg. pie crust mix 1 tbl. water 1 egg yolk 1/4 t. tabasco sauce (I use Louisianna hot sauce)
Saute beef in shortening. Add onion, tomato, pepper and garlic. Cook until onion is tender; add olives and tabasco sauce; mix. Blend in flour, salt and pepper. Cook until thickened, stirring constantly; cool. Prepare pie crust mix as directed. Roll out 1/8 inch thick; cut crust in 3 inch rounds; fill each with a teaspoon meat mixture. Brush with mixture of water and egg yold. Bake at 425 degrees for 10-12 minutes. This recipe was submitted to the book by Thetis Gardner.
