I am from America or Texas if you wish.  Nothing better than a really good Tex-Mex meal.  I am of Swedish & English descent & my husband is from Mexican descent, so around here....there are some really interesting food arrays at our table.

CHICKEN AND AVOCADO QUESADILLAS

2 Tbls olive oil, divided
w Tbls lime juice
1/2 teaspoon ground cumin
2 cups cooked, diced chicken
1 fully ripe Mexican Avocado, pitted, peeled & cubed
4 flour tortillas
1 cup shredded Jack or Pepper Jack Cheese

Preheat oven to 450 degrees, In medium bowl, combine 1 Tablespoon oil, lime juice & cumin.  Add chicken & avocado & toss a little.  Lay tortillas on a baking sheet & brush both sides with the remaining oil.  Spoon chicken & avocado mixture on 1 side of each tortilla, top with cheese.  Fold them in half to cover the filling, and bake until tortillas are crisp, about 8 minutes.  Serve with salsa or sour cream. smile
